Rigorous enforcement of food safety legislation is important but it is not, in itself, sufficient to prevent food poisoning. The CIEH (Chartered Institute of Environmental Health and HABC (Highfield Awarding Body for Compliance) have designed the Level 1 course to give first tier workers an appreciation of the fundamentals of good food safety/hygiene practice.
